About 2 weeks ago not quite acclimated to life with three and out of groceries, I was in a bind for lunch. A quick google search led me to this video. On hand I had about a cup each of raw almonds, cashew, and sunflower seeds. Just enough to make the recipe work! I don't think we'll ever buy almond butter again, you can really make it work with just about anything you have. YUM.
The kids loved everything about it, Penelope instantly fell asleep when I flipped on the Vita-Mix, and we enjoyed the left overs spread on apples the next day!
-3 cups of nuts or seeds
-Place in Vita-mix, turn on variable speed
-flip from 1-10, then high
-keep plunger push nuts around and down into blade until smooth, about 1-2 minutes
I stored it in the same glass container the nuts were stored in. It as stayed more smooth and spreadable than any store bought raw almond butter I've tried. We did not add anything, no roasting, salt, or oil.
I love Oliver's little hand! He just couldn't wait.
